A Healthy, Tasty Lunch (Or Side Dish) Perfect for Summer!

I looooove quinoa!
I've been making it for a while now and
I always make it into a salad,
but sometimes with different variations.
Here's my delicious recipe for quinoa salad
that could be paired alongside a flatbread sandwich
or you could just eat it by itself for lunch.

Quinoa Salad


Ingredients
For the salad
- 2 cups of water
- 1 cup of quinoa
- 1 cup of green beans, cooked and cooled
- 1/2 bag of dried cranberries
- 1 (6 oz.) container of feta cheese
- 1/4 cup of slivered almonds
For the dressing
- 1 tsp. garlic powder
- 1 tsp. salt
- 1 tbsp. sugar
-  8 tbsp. olive oil (or more/less to taste)
- 4 tbsp. apple cider vinegar (or more/less to taste)

Directions
1. Combine all ingredients for the dressing. Set aside.
2. Rinse the quinoa before cooking, then add it to small-medium sized pot with the water. Boil the quinoa and water rapidly, then bring down to a simmer. The quinoa will take 15 minutes to cook. You will see white threads coming out of the quinoa. Once all the quinoa looks like the way it is in the picture above, it is fully cooked. Set the quinoa aside to cool.
3. Once the quinoa is cooled, add the green beans, dried cranberries, feta cheese, and almonds. Mix until all ingredients are combined. 
4. Add the dressing to the quinoa mixture. Mix until all the dressing is spread throughout the quinoa salad.
5. Chill 2-3 hours or until cold.

We All Scream for Ice Cream!

Hi everyone! Sorry for the almost month-long hiatus!
I was on vacation and was busy with some other
things and really didn't have time to blog. (*insert extremely sad face here*)
But anyways, I'm back and ready to get into the
swing of things!
One of my favorite treats to have during the summer is
ice cream.
It's cold, sweet, and creamy,
and you know what's better?
